Apple just released Xcode 12.5 Beta. I haven’t tried out the beta yet, but according to its release, one new feature is that you can record animated GIFs using the built-in simulator:
Simulator can create animated GIFs from video recordings using the new Record Video feature. After recording a video, right-click on the video preview, then select Save as Animated GIF. To keep both the video file and the animated GIF, press and hold Option and select Save Copy as Animated GIF. You can adjust the dimensions and size of the generated GIFs in Simulator Preferences.
